Not only sweet potatoes, but chestnuts are also baked to perfection. Roasted chestnuts, baked potatoes, baked dried sweet potatoes, roasted ginkgo nuts, roasted garlic, roasted corn, etc., are also delicious.
*Important Note: The shichirin (charcoal grill) is not included. The items shown in image 13 are all that is included.
Tsubo-baked sweet potatoes, unlike stone-baked or regular baked sweet potatoes, are heated by enveloping the sweet potato without direct contact with the heat source. This results in even cooking without unevenness and retains moisture, creating a moist texture. They are highly praised as ripe honey sweet potatoes. You can refer to the many tsubo-yakiimo videos on YouTube.
(Reference images) In our home, we baked sweet potatoes using a basket for sweet potatoes (modified from a Daiso kitchen stand) and a long-handled tea strainer hung on the rim, made by winding soft annealed wire around a plastic bottle. For heat retention, we blocked the air vents of the kamado (stove) with Daiso oven clay. Leftovers can be stored in the refrigerator and enjoyed cold. If placed in a commercial baked sweet potato bag, they make a great product.
The Mushikamado (steaming kamado) featured in the manga Shota's Sushi was praised as a tool that uses traditional wisdom and technology to cook delicious rice, producing the best sushi rice, and its practical value was re-recognized. Currently, it is gaining attention for tsubo-baked sweet potatoes, but it is also used for pizzas, bread, and baked goods, and can be used for various dishes depending on your creativity.
